Ingredients
5 kiwis, peeled (divided)
1/4 cup water
4 tsp sugar
8 mint leaves, plus more for serving
ice, for serving
3 oz rum
2 oz fresh lime juice
sparkling water, for serving
1 lime, sliced (for serving)
Directions
  1. In a blender, add 4 of the kiwis and the water. Blend to puree. Strain through a fine-mesh sieve into a measuring cup. Discard the pulp and seeds. Set the juice aside. (This should yield 1/2 cup of juice.)
  2. In each of two tall glasses, add 2 teaspoons of sugar and 4 mint leaves. Muddle the mint and sugar to break up the leaves. Add ice to the glasses.
  3. Divide the rum, lime juice and kiwi juice between the two glasses. Top with sparkling water, and stir to combine.
  4. Slice the remaining kiwi. Garnish the glasses with kiwi slices, additional mint leaves and lime slices.
