Ingredients
1 1/2 lbs broccoli florets
2 Tbs olive oil
1/2 tsp salt
1/2 tsp pepper
6 slices bacon, uncooked
2 shallots, peeled and thinly sliced
1/4 cup Italian dressing
1 lemon, zested and juiced
1/2 cup goat cheese crumbles
3 Tbs unsalted butter
5 slices white bread, cut into cubes
Directions
  1. Line a large sheet pan with parchment paper. Preheat the oven to 425° F. Cut the broccoli florets into bite-sized pieces. Place the broccoli on the prepared sheet pan. Drizzle with olive oil. Season with salt and pepper. Toss to coat. Arrange in an even layer on one side of the pan.
  2. Cut the bacon into 1/2-inch pieces. Place the bacon and sliced shallots on the other side of the sheet pan. Roast for 20 minutes, or until the bacon is cooked through and broccoli is charred. Let cool completely. Transfer the cooled broccoli, bacon and shallots to a bowl.
