Artichoke & Tortellini Salad

Ingredients
1 (19 oz) pkg Brookshire’s Frozen Cheese Tortellini
2 cups baby spinach, chopped
1/3 cup extra virgin olive oil
3 Tbs red wine vinegar
1 tsp granulated sugar
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
2 cups canned or jarred artichoke quarters
2 cups cherry tomatoes, halved
3/4 cup parmesan cheese, grated
Directions
- Cook pasta according to package instructions. Drain pasta. Add spinach while pasta is still hot. Stir to wilt the spinach. Whisk together the oil, vinegar, sugar, Italian seasoning, salt and pepper. Add to pasta, and toss to coat. Stir in the artichokes, tomatoes and cheese. Toss to combine.
- Chill in the refrigerator for 4 hours or overnight.
