2 cups cantaloupe, peeled, seeded and small diced
2 Roma tomatoes, seeded and small diced (approx. 1 cup)
1/4 cup red onion, small diced
1 jalapeño, seeded and minced
2 Tbs fresh cilantro, minced
1 Tbs fresh basil, minced
1 large lime, juiced
1/2 tsp salt
Directions
- Combine all ingredients in a large bowl. Chill for at least 1 hour before serving. The salsa can be served with chips; or over grilled chicken, fish or shrimp tacos.
